Classic Chicken Rice Recipe😎
Ingredients:
- 2 cups jasmine rice
- 4 cups chicken broth (or water)
- 2 bone-in, skin-on chicken thighs (or breast)
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1-inch piece of ginger, sliced
- 1 teaspoon salt
- ½ teaspoon white pepper
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped (for garnish)
- 1 cucumber, sliced (optional, for serving)
Instructions:
- Rinse the rice under cold water until the water runs clear, then drain.
- In a pot, heat the oil over medium heat and sauté the garlic and ginger until fragrant.
- Add the rice and stir for 1–2 minutes until lightly toasted.
- Pour in the chicken broth (or water) and season with salt and white pepper.
- Place the chicken on top of the rice, skin side up.
- Cover and bring to a boil, then reduce to low heat and simmer for 15–20 minutes.
- Turn off the heat and let it sit, covered, for another 10 minutes to steam.
- Remove the chicken, brush with soy sauce and sesame oil, then slice into strips.
- Fluff the rice and serve with the chicken on top or on the side.
- Garnish with green onions and serve with cucumber slices.
